Here is what you need:
2 Hannah sweet potatoes
1-2 tablespoons olive oil
2 tablespoons water
1/2 small onion, coarsely chopped
1 Fresno red pepper or some similar variety, sliced
salt
Method:
Scrub the potatoes well. Next, slice them up into even rounds about 1/2 inch thick. Chop the onion and the pepper as well and place all ingredients into a Ziploc bag for at least 20 minutes.
Pour ingredients onto a cookie sheet and roast or bake on 425 for about 20-25 minutes, stirring occasionally. Take out and serve as a side after a good workout, or even enjoy on their own. They are so good! I’ve already purchased more so we can make them again!
Sometimes when I am traveling abroad I come across a sweet potato pie for dessert that is white. They are always very good. While shopping at Whole Foods earlier in the week, I happened across some Hannah Sweet Potatoes. Someone had broken one in half and I saw it was white, so I picked up a few. I am glad I did. I cooked them up utilizing a tip from my friend Tejas, and they were wonderful! They are a bit creamier and drier than the orange version we typically eat. |
