Chicken Tacos or Taco Salad

Well, I forgot to take a picture of the chicken taco salad but that is how we ate this batch. It’s easy! All you need is bowls, lettuce, taco meat, and toppings of your choice. It’s friendly to almost any diet and tastes great. We like ours with fresh chopped onion and tomatoes, guacamole, and salsa. This meat stays well for a few days so make a double batch if you don’t mind eating the same thing a few days in a row. Make it a salad one day and taco’s on corn tortillas the next.

Ingredients:
1 pound each ground chicken breast and chicken thigh
1 medium onion diced
1 medium tomato diced
3 cloves garlic smashed or pushed through press
5 diced roasted hatch green chiles (they are in season right now!) or 2 cans green chiles or 1/2-3/4 cup frozen green chile defrosted
1 tsp cumin
1/2 tsp salt
1/2 tsp. pepper

Put all ingredients into saute pan and cook until done.

Serve on a salad or in corn tortillas with your favorite condiments!
